Bryanston-based Olin-Shae De La Cruz, who was recently announced as one of this year’s Top 30 Miss SA contestants, is the co-founder of a marketing business called Swish EP and Advertising business called Advertising in Africa.
And, as if that weren’t enough, the 27-year powerhouse, also loves to dabble in the kitchen, whipping up simple, yet tasty dishes for herself and her family.
“While I enjoy cooking, I prefer simple, tasty dishes that don’t keep me in the kitchen for long. I’d much rather spend more time around the table with friends and family tucking into the food, she says.
While she lists her favourite meal as a traditional braaivleis and admits two of her guilty pleasures are cheese and carrot cake, De La Cruz also loves the colour green so her go-to winter dish is a simple, yet very tasty winter pea soup that requires minimal ingredients and not too much time working over a hot stove.
“I love this dish,” she says, “because it’s hale and hearty and can be made with the minimal amount of fuss. I like to serve it with thick slices of fresh, warm ciabatta and a light spread of butter which melts on the top which I dip into the soup like an Ouma rusk!”
Olin-Shae De La Cruz’s Winter Pea Soup
2 onions, chopped
2 garlic cloves, crushed
1 tbs butter
500g frozen peas
4 cups chicken stock
200ml coconut milk
1 tsp fresh thyme
1 tsp fresh dill
Salt & pepper
Place the butter into a pot over medium heat and once melted add the onions and garlic.
Add the thyme, stir and allow to simmer until brown.
Add the peas and the chicken stock. Stir and simmer for 10 -15mins
Add salt and pepper for taste before removing from the stove to cool (15 -20mins)
Pour the mixture into a blender and blend until smooth
Pour the blended mixture back into the pot and add the coconut milk.
Stir and simmer for 10mins.
Pour into bowls and sprinkle chopped dill over the top
